
After having cooked Muffins with Zucchini, I decided to vary a bit the recipe
and try Muffins with Smoked Salmon, Basil and Shrimps.
The result was 8 nice muffins with a strong taste of smoked salmon,
but it depends on the salmon you use.
Here comes the recipe:
120 gr of all purpose flour
2 eggs
3 tsp baking powder
12 big shrimps (like scampi) without skin
Smoked Salmon
Basil
120 gr of butter
salt
In a large bowl, cream together four eggs, baking powder and melted butter.
Cut in small pieces and add shrimps and salmon Them to the mixture. Add salt, if needed (Sometimes the smoked salmon is salted enough), and basil.
Mix everything together until you get a homogeneous mixture. Fill the muffin cups in
till 2 / 3 and bake for 20 minutes at 200 C.
