The other night we were invited to a splendid dinner of freshly caught you. According to the Norwegian tradition, the fish should be boiled in salted water with the same percentage of salt in the North Sea (5%) so as to maintain the its original flavor, and served with boiled potatoes, Romme (sour cream) and liver of the fish itself. The liver of the Six (or cod) is gently removed carefully removing the skin that covers it, where they nest parasites, and cooked in a pan with a little 'salt and pepper. The liver is naturally rich in oil and seasoning the fish is boiled, it has a flavor that may not like ..

This is also traditionally cooked whale meat.

Finally a decent pizza! On the second attempt we managed to cook a pizza worthy of the name.
Here are the tests:

I wonder why the first time there was no success. The recipe is the mother of Andrea, sperimentatissima. Has been guilty of poor workmanship or the oven, this time Andrea has really "abused" the pasta. Very good, no offense, but Norwegian pizza!

Tips To Beat Solitare

Chili Pizza with Bacon


This is a Canadian recipe for Chili, Andrew got it from His cousin in Ottawa. It's
more fresh than the standard one and nice for a dinner with friends.


Ingredients:
1 small onion
250 gr bacon
Olive oil
Tomato sauce (1 can)
3 cans of red beans
Chili powder
Fresh tomatoes
Some salad
Yellow cheese
Corn-chips

Cut the onions in slices and the bacon in small pieces. Put both of them in a
saucepan with a bit of olive oil, and fry them for 10 minutes. Add
tomato sauce and cook for 15 minutes more.
Add beans and chili powder, cook for almost 1 hour.
Cut tomatoes in cubes and cheese in thin slices (like spaghetti).
Put in each dish:
first corn-chips, above chili, then salad, tomatoes and on the top
the cheese.
Serve immediately.

Muffins



After having cooked Muffins with Zucchini, I decided to vary a bit the recipe
and try Muffins with Smoked Salmon, Basil and Shrimps.
The result was 8 nice muffins with a strong taste of smoked salmon,
but it depends on the salmon you use.
Here comes the recipe:

120 gr of all purpose flour
2 eggs
3 tsp baking powder
12 big shrimps (like scampi) without skin
Smoked Salmon
Basil
120 gr of butter
salt

In a large bowl, cream together four eggs, baking powder and melted butter.
Cut in small pieces and add shrimps and salmon Them to the mixture. Add salt, if needed (Sometimes the smoked salmon is salted enough), and basil.
Mix everything together until you get a homogeneous mixture. Fill the muffin cups in
till 2 / 3 and bake for 20 minutes at 200 C.

Sushi Dinner


Yes, the home of salmon that I could not try to cook it in every way possible, even raw! I had never tried to cook sushi and I did not think it was that easy. The key ingredients, not to mention fresh fish can be found at the International Store, and hopefully also in Italy .. (I'm already planning to fill your suitcase with Nori seaweed for the first survival while they explore the shops of international Livorno!)

Very good! And Sushi-geeks like me always in a hurry, the rice will keep perfectly for a couple of days in the refrigerator, tightly closed, just change it in the microwave a few seconds before using it.
It is delicious with smoked salmon, avocado and sour cream.

returned from our trip I did not really want to start cooking, so I made a fast but very tasty dinner. Vol au vent with shrimp and spinach salad.

Vol au Vent shrimp:
A package of frozen puff pastry or vol au vent ready (they are not here ..)
5 shrimp, I used frozen ones already shelled
milk, butter, flour for the white sauce, a sprig of thyme
,
salt, pepper Cut the dough
dough into squares or circles (4 cm in diameter) and bake in preheated oven for 15 min.
breaded shrimp with a little 'flour mixed with a pinch of salt and pepper, and cook in a pan with a little' of melted butter until they turn pink.
Prepare a little bit of white sauce with a cup of milk, butter and a tablespoon of flour, salt. Put in blender
shrimp, the sauce and the thyme leaves. Blend all the ingredients. Open mid
the already cooked and puffed pastry, fill with a spoonful of the mixture and close.

Spinach Salad:

It 's a simple salad of fresh spinach topped with grated parmesan cheese, olive oil, salt and lemon. Simple, but very tasty!




A Post for Tanja, recipe vol au vent with mushrooms, a variant of the filling as fast and tasty:


Vol au Vent with Mushrooms:
a box of frozen Puff Pastry
1 can of mushrooms mushrooms
1 / 2 cup of dried porcini mushrooms
Norvegia cheese or similar
garlic, olive oil and parsley

Preheat the oven to 175 C. Cut 2 foils of puff pastry in square or circle of 4 cm of diameter. Put inside the oven for 15 minutes until they become 4-5 cm high.
Place dried mushrooms in a cup and fill with boiling water, leave them for 15 minutes or 2 min in the microwave oven.
Put 3 tablespoons of olive oil in a saucepan with a piece of garlic and some parsley, fry for a while and then add the mushrooms, both the porcini and the champignon.
Cook for 5 min then add the cheese. Keep on heating until the cheese is melted.
Cut a circle or a square in the center of each piece of puff pastry to make a sink and fill it with the mushrooms sauce. Serve warm.

We just returned from a "wonderful" weekend at the Lofoten Islands. Four days with a maximum temperature of 9 degrees with wind and rain! Too bad, because the islands are beautiful, especially Moskenesøy, the most southerly island among those reached by car. The Lofoten Islands are historically linked to Italy for the trade in dried cod, which are the major manufacturers. The cod is prepared immediately after capture. try some recipes. I got off at the ICA store under the house and I looked
what was available. I thought I was a risotto with asparagus

all ..) But there are always the zucchini. Zucchini muffin recipe with
Chefs Charter combined with flowers spkelt \u200b\u200bsalmon (salted salmon

smoked) and gorgonzola mousse. I had to change a bit '
the recipes to suit local ingredients. In Muffin I used the 'Alter
Mommark Norwegian cheese smell very strong, but little flavor

is virtually unobtainable, so I opted for a cream cheese type
philadelphia. I mixed 2 / 3 of gorgonzola, there is only one
Galbani blue cheese, and 1 / 3 of cream cheese with a dash of whiskey
, to the delight of Andrew! Finally, two slices of toasted white bread and a spoonful of
Romme (a mixture of the sour cream and our
cream) completed the composition.
The dinner was very satisfying, even if the muffins did not grow to perfection
